How to tell a genuinely good hawker stall from a hyped/tourist trap?

After years of hawker hunting, my tells: 1) uncle/auntie queue over tourist queue, if the office crowd and neighbourhood aunties queue, it's the real deal, 2) limited menu, a stall doing ONE thing (just chicken rice, just laksa) usually nails it, beware 20-item menus, 3) they sell out and close early, scarcity = demand, 4) old regulars chatting with the owner, 5) the stall looks worn but the wok hei/smell is strong. Michelin Bib stickers can be legit but some rest on old glory, go on a weekday lunch and judge yourself. Also, a queue at 2pm (odd hour) means people specially come, versus a queue at 12pm which could just be office lunch rush. Trust your nose over stickers.
